I hosted a Christmas party in my home recently, but had so much going on the week leading up to the party that I didn’t think I would have time to bake. Fast forward to Saturday morning (the morning of the party) and find me rapidly scouring recipes over the Internet.
I came across this recipe for Oreo Stuffed Chocolate Chip Cookies, and knew I had a winner. I already had everything in my pantry, and these were super easy to whip up on a dime! I modified the recipe just a bit, and ended up with a deliciously indulgent batch of cookies that were thoroughly enjoyed by my party guests.
2 sticks butter, softened
3/4 cup light brown sugar, packed
1 cup granulated sugar
2 large eggs
1 tbsp vanilla extract
3 1/2 cups all-purpose flour
1 tsp salt
1 tsp baking soda
10 oz. milk chocolate chips
1 package (original) Oreo cookies
Preheat oven to 350 degrees. In a mixing bowl, cream the butter and sugars together thoroughly. Add the eggs and vanilla extract and beat until just combined.
In a separate bowl, sift together the flour, salt and baking soda. Slowly add to the sugar/egg mixture above. Mix in the chocolate chips.
Scoop out a tablespoon or two of dough and place on top of one Oreo cookie. Turn the cookie around and cover with another scoop of cookie dough. Spread and pinch the dough around the sides so that the dough is uniform and the cookie is completely covered.
Place cookies approximately 2 inches apart on a parchment lined baking sheet. Bake at 350 degrees for 9 – 13 minutes (note – baking time may vary*), until just slightly golden brown. Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
*Just a note, this recipe mentions that it makes two-dozen cookies with a bake time of 9-13 minutes. I got 18 cookies from the recipe and mine had to bake for approximately 19 minutes. This may have been due to my crappy oven, combined with the fact that my cookies were probably a little bigger than those in the original recipe, but regardless, be sure to check after 9 minutes and update your timing accordingly.
